Raspberry Coconut Smoothie Recipe makes 2 servings 2 cups raspberries (I used frozen, but fresh will work too) 2 frozen bananas 4 T coconut butter (shredded coconut work work too) 1 1/2 cups coconut milk 1 T chia seeds Throw all ingredients in the blender and blend for about 60-90 seconds. With the Blendtec, you just hit the smoothie button and it does the rest. If you plan on drinking 1 serving and saving the rest, pour the remaining smoothie into ice cube trays and freeze for quick blending on another day. Enjoy and good luck!

Very cute idea to do in the fall So I was in the mood to make some kind of fall treat for a group of our friends. Where we live there are a couple of wild apple trees so I thought maybe mini caramel apples would be fun. No one can ever finishes a whole caramel apple anyway. I didn't have any sticks to put in the apples so when my husband was picking the apples I picked up a couple of apple branches from the ground and cut them into small sticks. I soaked and scrubbed the sticks to make sure they would be clean enough to use. I also cut the ends at an angle to make them sharp. Then in between naps and poopy diapers I managed to stick the apples, make the caramel and dip them. My favorite thing was that a lot of the apples still had there leaves on them.

Baked Southwestern Egg Rolls -- Made on 12/22/2011. I added about a cup of shredded chicken and this recipe made 45 egg rolls. They cooked up very crispy. I only cooked a couple and froze the rest. These are going to be great to pop in the oven for a snack or to take somewhere. Will use spring rolls instead.

A party where we all gathered to watch a football game that was most definitely not super (for a Colts fan, anyway). While the game itself was quite a disappointment, these egg rolls were anything but. This version is vegetarian with black beans, corn, spinach, and cheese. I’m sure they would be wonderful with some cooked chicken mixed in as well, but I like them as they are. They were gobbled up in almost no time, and I probably should have made a double batch. I absolutely love them, especially when paired with my beloved salsa. I’m sure we’ll be having them frequently – you know, to help drown our sorrows until next football season. Baked Southwestern Egg Rolls Printer-Friendly Version Ingredients: 2 cups frozen corn, thawed 1 (15 oz.) can black beans, rinsed and drained 1 (10 oz.) package frozen chopped spinach, thawed and squeezed dry 2 cups shredded Mexican cheese blend 1 (4 oz.) can diced green chiles, drained 4 green onions, chopped 1 tsp. ground cumin ½ tsp. chili powder 1 tsp. salt ½ tsp. pepper ¼ tsp. cayenne pepper 1 package egg roll wrappers (about 24 total) Directions: In a large bowl, combine everything but the egg roll wrappers. Mix well to blend. Lay an egg roll wrapper out on a work surface so that one of the corners is pointing toward you and place ¼ cup of the filling in the center. Fold the tip closest to you up over the filling, roll a bit, then take the points pointing outward and fold them in toward the center. Continue rolling into an egg roll shape until a small part of the remaining point is still free. Dip a finger in water or beaten egg and lightly brush on the edges of the free corner. Finish rolling and press to seal closed. Repeat with the remaining wrappers and filling. Preheat the oven to 425˚ F. Lightly oil a baking sheet with cooking spray. Place the sealed egg rolls on the baking sheet seam side down and spray the tops of the egg rolls with cooking spray. To cut down on the possibility of "graininess", I use only the florets and discard the stems/stalks. I usually add some garlic powder and chives, too. Sometimes if it seems grainy or thin, I will add cream cheese. Flavor is always spot on, sometimes just need to adjust for texture.

No bake energy balls No-Bake Energy Bites Recipe Ingredients: 1 cup (dry) oatmeal (I used old-fashioned oats) 1 cup toasted coconut flakes 1/2 cup chocolate chips 1/2 cup peanut butter 1/2 cup ground flaxseed 1/3 cup honey 1 tsp. vanilla Method: Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week. Makes about 20-25 balls. Ali’s Tip: Substitution ideas can abound for just about any of these ingredients! Feel free to substitute in your favorite nut butter (almond butter, sunflower seed butter, etc.) for the peanut butter. And you could also add in some wheat germ in place of some or all of the flaxseed. I would caution, though, against substituting agave nectar for the honey, as the honey’s thickness helps hold things together.
