Healthy Zucchini, Black Bean, and Rice Skillet. So easy and you can swap out ingredients if you don't have something. Use squash or spinach instead of zucchini, pinto or chickpeas instead of black beans. Switch brown rice or quinoa for white rice.
spicy bean and rice burritos These are basically exactly the same as my other black bean burrito pin, with some added brown rice. I think I might prefer the other recipe just a smidge but you won't go wrong with either one!
Black bean quesadilla- this is my family's new favorite! (MH) - edits: used of white onion, no chili powder (didn't have any), red beans (not black), mozzarella cheese (didn't have pepper jack on hand). Full servings makes about 8 quesadillas with filling
