I found this Chocolate Walnut Breakfast Mousse recipe on Amy Crawford's (aka The Holistic Ingredient) book 'A Nourishing Kitchen' and have had it for breakfast quite a few times. I love it as it is a little different than your standard breakfast meals, yet is still healthy and fills you up nicely. My version has been amended slightly with less ingredients and can be made just before you want to eat/drink it, as the original version was recommended to be made the night before.

Slow Cooker Sausage Breakfast Casserole Prep time: 15 min Total time (start to finish): 8 hours 15 min • 1 pkg. (26–32 ounces) frozen shredded hash brown potatoes • 1 pkg. Jimmy Dean® Premium Pork Sausage Regular, cooked, crumbled • 2 cups (8 oz.) shredded mozzarella cheese • ½ cup (2 oz.) shredded Parmesan cheese • ½ cup julienne-cut sun-dried tomatoes packed in oil, drained • 6 green onions, sliced • 12 eggs • 1 cup milk • ½ tsp. salt • ¼ tsp. ground black pepper Spray a 6-quart slow cooker with cooking spray. Layer half of the potatoes on the bottom of the slow cooker. Top with half of the sausage, mozzarella and Parmesan cheese, sun dried tomatoes, and green onion. Repeat layering. Beat eggs, milk, salt, and pepper in large bowl with a wire whisk until well blended. Pour evenly over potato-sausage mixture. Cook on low setting for 8 hours or on high setting for 4 hours, or until eggs are set. Makes: 12 servings t; h�pi “��f� arrange 8 balls, seam side down and sides almost touching, into ring on cookie sheet. Arrange remaining 12 balls, sides almost touching, around outer edge of first ring. Brush rings with beaten egg. Sprinkle with Parmesan cheese and Italian seasoning. Bake 18 to 20 minutes or until golden brown. Meanwhile, in small microwavable bowl, microwave pizza sauce, loosely covered, on high 45 to 60 seconds or until warm. Carefully slide wreath from cookie sheet onto serving platter. Place bowl of pizza sauce in center of wreath. Garnish with fresh oregano, if desired. Serve warm. Makes: 10 servings

Jimmy Dean® Sausage Crumbles, 1 cup shredded mozzarella, 1/2 cup parmesan, 1/2 cup drained julienned sun dried tomatoes, 6 sliced green onions, 12 eggs, 1/2 cup milk, 1 tsp salt, 1/4 tsp pepper. Spray crock pot, layer ingred, beat eggs + milk, pour over. Low 8 hours or high for 4 hours. Wonderful! Could halve, too.
