Cheese Potato & Smoked Sausage Casserole: 3 cups idaho potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb 4 tablespoons butter 4 tablespoons flour 2 cups milk 1/2 teaspoon salt 1/4 teaspoon pepper 1/2 lb Velveeta cheese, diced 1/2 cup sharp cheddar cheese, shredded 1 lb skinless smoked sausage (Eckrich is my favorite brand) 1/8 teaspoon paprika

Cheesy Smoked Sausage Skillet - this was quick, easy, and delicious!! And Mike approved. I think you could use any type of meat: chicken, sausage, etc. I sub'd milk, butter and flour for the heavy cream. I also thickened up the sauce just a tad. www.plainchicken....

Slice potato almost but not all the way through. Tuck butter between slices. Bake until tender. Dribble with sour cream. Shower with grated cheese. Bake again until melted and gooey. Lavish with more sour cream and chopped scallion or chili or whatever you please.

Crushed Hot Potatoes. My friend from Hungary makes these, and they are SO good, bake or boil potatoes before crushing them.
