SIDE DISH AVOCADO SALAD. Avocados, cherry tomatoes, red onion, fresh basil, coriander, red chili finely chopped (optional). For the dressing: balsamic vinegar, olive oil & pepper to taste. I use this dressing (preparing the mixture in a cup) for many of my Mediterranean salads, no fat and it's delicious.
Lunch: quinoa salad with black beans, roasted corn, jalapenos and chopped tomatoes. This Mexican Quinoa Salad recipe from The Garden Grazer would be close equivalent to what we were served at the party.
