So maybe this isn't the healthiest b/c of some of the ingredients but I think it is probably less carbs than real lasagna....... and I would use low fat cheese and sour cream :) Enchilada Lasagna - It's easy, has few ingredients, and is absolutely DELISH.
Tomato, Sweet Potato, Zucchini, Summer Squash Casserole: slice all veggies approx same size alternate slices in baking dish drizzle with olive oil minced garlic & onion, s, thyme, bake at 425 for 20 min, top with Parmesan then bake another 15 min
Another pinner: We are Ranch snobs at our house....no bottled Ranch-yuck here! This is the BEST HOMEMADE RANCH!! This tastes exactly like the Hidden Valley Ranch Packets that you add mayo and milk to....but WITHOUT the MSG and at A FRACTION OF THE PRICE!
