Cornmeal Shortbread 1c butter, softened 1/2c powdered sugar 1t vanilla 2c flour 1/4c cornmeal, plus more for coating 3/4t salt Cream butter in mixer fitted w/paddle. Add powdered sugar; mix well. Beat in vanilla. Mix in flour Mixture will be crumbly at 1st, keep beating til a soft, non-sticky dough forms. Shape log in cornmeal to coat. Wrap in plastic; chill1hr. Preheat300F. Slice thinly , bake12-15min on parchment. Let cool on pan - they'll crisp while cooling. Rosemary Shortbread 1 1/2 c all-p 1/2c butter, chilled 1/4c sifted powdered sugar 2T minced fresh rosemary 2Tgranulated sugar Process first 4 ingredients in a food processor until mixture forms a ball. Roll dough to 1/4" thickness on a lightly floured surface. Cut with a 2" cookie cutter; place on lightly greased baking sheets. Bake at 325F 18-20 min or until edges are lightly browned. Sprinkle w/sugar. Cool on wire racks.
