Pioneer Woman Potato Soup. Another pinner says: made this earlier in the week and it was perfect for a cold day. I served it with cornbread on the side and it was delish. I omitted the parsley and it was fine. Highly recommend this recipe! I will make this potato soup from now on instead of my old boring recipe. Don't skimp on the cajun seasoning! The heat is delicious.

Carrot Soup. I would use coconut milk in addition to broth and maybe add some curry spices (cumin, turmeric, paprika, chili). I would also make some spiced pepitas as a garnish for extra texture. And omit the dill. I hate dill. And probably use creme fraiche instead of heavy cream. So I would change it entirely but good idea for all those storage carrots I have from my winter CSA. lol
