Healthy Snack: easy baked carrot chips
A lot of projects are trial and error. Recipes especially. Some are a lot harder than they look and others just plain don't come out like someone said they would. That was the case for me with these carrot chips I pinned. I'm not sure where these came from, because apparently you have to have a Tumblr account to go to this site. Anyway, I followed the directions as listed: I even tried to make the long thin strips like the picture because I thought those looked so nice. I used our cheese slicer so I could get thicker slices. Tossed in olive oil, salt and pepper. Then I added a little thyme for extra flavor. But after 12 minutes at 350° they were soft and limp, not toasty and crispy like I had hoped. So a few days later I tried again, making the following adjustments. I used my salad shooter to make carrot chips, because it was much faster and a better thickness (Salad Shooter--helps you every day!). Then I tossed them in oil, salt, pepper and thyme again, and baked them for about 20 minutes at 425°. I flipped them using tongs a couple of times to make sure they baked evenly. Much better. Thing One even called them "chips." On a different but related note: I had a coupon for Greek yogurt and a recipe I wanted to try, so we bought some Greek yogurt, but now I haven't felt like making that recipe, and my yogurt is about to expire, so today I had to look up other options for using up said yogurt. I found this dip on All Recipes that sounds great to go with these chips. I'm planning to try it later this week, so I can't vouch for it yet, but I thought it would be good to put it with the carrot chips. Here it is: Veggie Chips Dip1 C. greek yogurt 1/4 C. chopped fresh parsley 1 Tbs. chopped fresh mint 1 clove garlic, minced 4 green onions, finely chopped 2 Tbs. lemon juice (or to taste) salt and pepper to taste. Mix all ingredients and enjoy with root veggie chips. All in all, I appreciate the idea of carrot chips (especially since I sometimes have issues eating raw carrots), even though the instructions didn't work for me. So, if you want to make them, longer and hotter will give you crispy carrot chips. Pinned theirs (tried it, changed it, tried it again), done that. Thanks for reading. -Haley

CRISPY, ROASTED CHICKPEAS (GARBANZO BEANS) //////////////////// The texture of Roasted Chickpeas is surprisingly crispy/crunchy – they make that lovely, loud crunch in your mouth like potato chips. Roasted Chickpeas are really are perfect as a little bar snack to nibble on with beer. ///////////////// NOTE: Chickpeas and garbanzo beans are the same thing. ////////////////// INGREDIENTS: 1.) Chickpeas, (garbanzo beans) 2.) Seasoning blend of your choice. (I use Creole Crawfish seasoning by Louisiana). 3.) Olive oil. ///////////////////// METHOD: STEP ONE: Drain garbanzo beans. Let the water run on them for a while to get rid of starchy, cloudy, slippery, water it was packaged in. STEP TWO: Lay them on a baking sheet that has been lined with a paper towel. STEP THREE: You’ll see that some of the beans have a thin skin on them…you can leave them on, or use the paper towel to rub them off. Discard the skin should you decide to. STEP FOUR: Now they should be completely dry. Remove the paper towel. STEP FIVE: Drizzle them with a bit of olive oil. Toss them about to distribute the oil. STEP SIX: : Put them in the oven for 30-40 minutes at 400. (If using a convection oven, set it to 325). Until golden brown and crunchy, not soft. STEP SEVEN: Add salt and whatever seasoning spice you want.

Easy Baked Zucchini Chips. 2 zucchini (well washed), 2 tsp olive or coconut oil (divided), salt and pepper---Slice the zucchini in a mandoline- about 1/8" thick. Lay chips out on a paper towel, let sit 20 minutes. Pat dry any excess moisture. In a large bowl, lightly toss with 1 tsp oil, salt and pepper. Prep a baking sheet with 1 tsp oil or spray. Bake at 230 for 2 1/2 hours, or until crisp.

We used to have a double-date almost every Sunday night with our best buds to Applebee's for 1/2 price appetizers.....mmm, the delicious boneless buffalo wings and pork tacos, chicken quesadillas and mozzarella sticks.....*pardon me while I wipe the drool off my keyboard.... Those delightful visits ended when the four of us decided to make some changes for our health (and weight) and started a "Biggest Loser" type challenge. My husband and I started eating a mostly low-carb way (cutting out sugars and focusing on lots of veggies, fruits, and meats) at the beginning of the year. It's gone well -- we're feeling good and shrinking, lol......but there have been some yummy foods that we miss....like those scrumptious appetizers! (*edit 2/1/16: I've now been following Trim Healthy Mama for a couple years and feel wonderful! It's the best thing I've ever discovered health-wise! These snacks would be in the "S" category for THM!) We've been on the lookout for tasty recipes that we can have though, and even created some of our own low-carb deliciousness, like this Jalapeno, Bacon, and Pepper Jack stuffed chicken recipe. In our search, we've come across some great looking low-carb foods that would be great for the Super Bowl, so I thought I'd share in case anyone else is afraid of starving or "falling off the wagon" for the Big Game. ;) Not only, will you not go hungry, but the ones we've tried have been de-licious!
