      This is the falafel recipe Steph and I use, except we fry it with a little bit of extra virgin olive oil until crisp instead of baking. we usually leave out cilantro or lemon juice if we don't have it. use trader joe's whole wheat flatbread and eat with hummus, lettuce, olive, and sometimes cheddar cheese. so good!       Baked Falafel. I only baked 15 minutes on one side. I thought they were DELICIOUS! I didn't miss the crunch of the fried falafel at all. Next time I will blend everything in a food processor (mashing the chickpeas by hand was a little too laborious) and next time I will probably brown them like meatballs in a pan first. I also added more olive oil because they were too dry without the extra oil. Definitely worth a try if you like falafel!
