Greek Chicken Pasta Salad - recipe for Taziki's Friday Pasta - homemade vinaigrette tossed with penne pasta, chicken, feta, tomatoes and fresh basil - good warm or cold. Great for a potluck. Can make a day ahead - the flavors get better as it sits. This is seriously delicious!
Roasted Greek Potatoes (Plain Chicken): 1 pound red potatoes - small ones, 2T olive oil, 1T Greek seasoning (or oregano), Juice of one lemon (2-3 T of bottled). Heat oven to 375. Wash & cut potatoes into quarters, or more if they're big. Toss potatoes in olive oil, seasoning & lemon juice. Cover tightly with aluminum foil & bake 45 min. Remove foil & bake for 20-30 min until nice and golden
