Tortallini, warm tomato salad.  
I cut the tomatos in half and roast on a baking sheet (with parchment/silicone) for 20 minutes at 350 so they really condense their flavor.  I also don't add the asperagus, but green beans if I have them, and we usually use spinach, not arugula.
