Coconut Flour Banana Walnut Bread - this was really good. It uses 2 dates instead of refined sugar and it was definitely sweet enough. It says to use a small loaf pan. I used 2 mini loaf pans and that worked fine.

1 large egg 5 lg of oat bran 2 Tbs of psyllium husk 3 lg wheat bran 1 heaped tbsp of yeast 6 lg yogurt 1/2 tbsp sweetener (xylitol) 1/2 tbsp grated salt - Amounts for a form of 6 cm x 12 cm - flour of any kind is prohibited! Mixing eggs with sweetener and salt about 1-2 minutes. In a separate bowl mix bran with yeast and put them over the eggs. Add the yogurt and mix well. Pour into a small form (I used a cardboard form 6cmx12 cm) and bake in preheated oven at 180C for about 40-50 minutes.
