Asparagus & Chicken Enchiladas- This was amazing! I had a lot of leftover sauce (which was basically a homemade cream of chicken mixture). So bonus, I froze it for future recipes. I used light butter & nonfat Greek yogurt & still turned out great.
So maybe this isn't the healthiest b/c of some of the ingredients but I think it is probably less carbs than real lasagna....... and I would use low fat cheese and sour cream :) Enchilada Lasagna - It's easy, has few ingredients, and is absolutely DELISH.
