    Asparagus and Chicken Enchiladas So delicious! I didn't have sour cream, used plain greek yogurt, I used a 1/2 packet of Rick Bayless green enchilada sauce, and I cooked the chicken in the pressure cooker took it off the bones, threw bones, skin, some dark meat back into cooker and made a really rich chicken stock. Used stock w/the roux (added a pinch or two of nutmeg, cayenne and white pepper). I used red onion, soaked in cold water then towel dried. Truly fabulous!
