Grilled Zucchini Pizza Slices - great idea for oversized cucumbers. For really large ones with developed seeds, prep gets more elaborate: slice in half lengthwise, remove seeds, score lengthwise 2-3 times, microwave, then use a panini grill or grill press to flatten them out. We did this in the oven but grilling would allow the liquid to drain off easier.
