This burrito bowl is a simple Thai twist on a regular burrito. Fresh carrots, cucumbers, bean sprouts, cilantro, green onions and Thai chili peppers sit on top of ginger-infused jasmine rice and sweet and spicy tofu. It’s all coated in a sweet, tangy and slightly spicy peanuty-Massaman Curry sauce.
Chicken with Coconut-Lime Peanut Sauce. "Made this with pork tonight and it is fantastic! The sauce seems a bit grainy to me, but I used Jif low fat peanut butter. That might effect it, it might not. All I know is that it is super yummy!!! I also substituted a little brown sugar for the Stevia and put at least a tsp of cinnamon in instead of a pinch. So good!!!!"
Light Thai Chicken Lettuce Wraps: For the peanut sauce ¼ cup fresh lime juice 4 teaspoons fish sauce 4 teaspoons low sodium soy sauce 4 teaspoons canola oil 3 teaspoons sugar 2 teaspoons honey 2 teaspoons water scant 1 cup peanuts 8 small cloves garlic, minced 1½ tablespoons lemongrass paste (I used fresh lemongrass ground into a paste)
