I used 2 over ripe bananas (mashed well), 1 cup of quick oats, and semi sweet chocolate chips. I baked them for about 10 minutes at 350 until they were set. This recipe made me 9 cookies. Vegan quinoa & sweet potato chilli. Pinned and tried! I made this as a late night healthy 'snack' and loved it. I didn't have black beans so I used one tin of kidney beans and one tin of black eyed beans. I also added a green bell pepper for some more texture. I had to cook for the whole 30 mins to get the mix to thicken up, the end result was delicious, especially topped with a little Parmesan (though obviously this turns the dish into non vegan). The chilli powder I used was hot therefore the dish really packed a punch.

Quinoa stuffed bell peppers. i sort of did my own thing with this recipe. I cooked my quinoa with half tomato soup half water and some taco season. I cooked some ground turkey burger corn and black beans with pace salsa and the other bit of taco seasoning. Finally i mixed the 2 together and let it simmer to thicken before I added it to the peppers. Really good, I dont like peppers but Ioved the stuffing.
Quinoa Stuffed Peppers Calories 233 Protein 16 Carbs 25 Fat 7 1 medium onion, finely chopped (1 cup) 2 Tbs. olive oil 2 ribs celery, finely chopped (1/2 cup) 1 Tbs. ground cumin 2 cloves garlic, minced (2 tsp.) 1 10-oz. pkg. frozen chopped spinach, thawed and squeezed dry 2 15-oz. cans diced tomatoes, drained, liquid reserved 1 15-oz. can black beans, rinsed and drained 3/4 cup quinoa 3 large carrots, grated (1 1/2 cups) 1 1/2 cups grated reduced-fat pepper Jack cheese, divided 4 large red bell peppers, halved lengthwise, ribs removed Directions 1. Heat oil in saucepan over medium heat. Add onion and celery, and cook 5 minutes, or until soft. Add cumin and garlic, and sauté 1 minute. Stir in spinach and drained tomatoes. Cook 5 minutes, or until most of liquid has evaporated. 2. Stir in black beans, quinoa, carrots, and 2 cups water. Cover, and bring to a boil. Reduce heat to medium-low, and simmer 20 minutes, or until quinoa is tender. Stir in 1 cup cheese. Season with salt and pepper, if desired. 3. Preheat oven to 350°F. Pour liquid from tomatoes in bottom of baking dish. 4. Fill each bell pepper half with heaping 3/4-cup quinoa mixture, and place in baking dish. Cover with foil, and bake 1 hour. Uncover, and sprinkle each pepper with 1 Tbs. remaining cheese. Bake 15 minutes more, or until tops of stuffed peppers are browned. Let stand 5 minutes. Transfer stuffed peppers to serving plates, and drizzle each with pan juices before serving.

Grilled Shrimp & Lemon Skewers with Feta Sauce - 1/2 cup plain yogurt|1 scallion, white & light green parts only, thinly sliced|4 large garlic cloves, very finely chopped|2 1/2 tablespoons finely chopped dill|1/2 cup crumbled feta cheese|salt & freshly ground pepper|1/4 cup olive oil|2 pounds peeled & deveined large shrimp|2 lemons, each cut into 12 wedges - Light a grill. In bowl, mix yogurt with the scallion, 1/4 of the garlic and 1/2 tablespoon of dill. Stir in feta, mashing it slightly. Season with salt and pepper. In another bowl, combine remaining minced garlic and 2 tablespoons of dill with olive oil. Add shrimp and lemons, season with salt and pepper and toss to coat. Thread 4 shrimp and 2 lemon wedges onto each of 12 skewers. Season with salt and pepper and grill over medium-hot fire, turning occasionally, until shrimp are charred and cooked throughly, about 5 minutes. Transfer skewers to a platter and serve at once with feta sauce.
