1 bag Carrots
1 tsp Ginger, ground
1 can Pineapple in, juice
1/2 cup Raisins, dark


2 Egg whites, large
2 Eggs, large

Baking & Spices

2 1/4 cup All-purpose flour
1 tsp Baking powder
2 tsp Baking soda
3/4 cup Brown sugar, packed dark
2 tsp Cinnamon, ground
3/4 cup Confectioners' sugar
1 cup Granulated sugar
1 tsp Salt
1 1/8 tbsp Vanilla

Oils & Vinegars

1/3 cup Canola oil


2 oz Cream cheese, reduced-fat
1/2 tsp Low-fat milk
