Mashed Potato Rings with Homemade Buttermilk Ranch Dipping Sauce!
Potato Rings with Homemade Buttermilk Ranch Dipping Sauce Makes 32-40 Ingredients: 3 large russet potatoes, cleaned peeled and chopped into large pieces 1/3 cup plus 2 tablespoons heavy cream ¼ cup unsalted butter (½ stick), softened ½ cup caramelized yellow onions, chopped 3 tablespoons chives, thinly sliced 2/3 cup all purpose flour 1/3 cup rice flour 2 tablespoons garlic powder 1 tablespoon onion powder 1 tablespoon smoked paprika 2 eggs, lightly beaten salt and pepper to taste 2 quarts vegetable oil buttermilk ranch sauce: 1/2 cup light mayonnaise ¼ cup low -fat buttermilk 1 ½ teaspoons fresh lemon juice 2 tablespoons flat leaf parsley, minced 1 tablespoon chives, thinly sliced 1 teaspoons dill, minced ½ teaspoon dry mustard salt and pepper to taste Directions: 1. Place the potatoes in a large pot and fill with water. 2. Bring to a boil on medium -high heat and cook until the potatoes are fork tender, a20 -25 minutes. 3. Drain the potatoes into a colander and pour back into the pot. 4. Pour the cream and butter over the potatoes and mash with a potato masher until smooth (Add more cream 1 tablespoon at a time, if needed). 5. Fold in the caramelized onions and chives until fully incorporated. Season with salt and pepper and stir. 6. Spread the mixture onto a sheet pan, about ½ inch thick and place in the refrigerator until the mixture has cooled down and hardened, 4-6 hours. 7. While the potato mixture cools place both flours, garlic powder, onion powder and smoked paprika into a shallow dish and stir together until fully combined. Set aside. 8. When the potato mixture has cooled, remove from the refrigerator and using 1-1 ½ inch circle cutters, cut out as many circles as possible (usually makes about 32-40). 9. Using a ½ inch circle cutter, cut out a ½ inch circle from every 1-1½ circle, creating a small donut shape. 10. Dip the potato rings into the flour mixture followed by the egg mixture and finally again in the flour mixture (make sure the rings are completely coated). 11. Place the coated rings onto a clean sheet pan, lined with parchment paper and place in the freezer and allow the rings to freeze completely, 4-6 hours. 12. Once the potato rings are frozen, preheat the oil, in a large pot, to 375°F. 13. While the oil heats up, place the ingredients for the dipping sauce into a mixing bowl and whisk together. Season with salt and pepper. 14. When the oil is hot, carefully drop a few of the rings into the oil and fry for 4-6 minutes or until golden brown. 15. Drain onto a large plate lined with paper towels and season with salt with pepper. 16. Repeat with the remaining potato rings and serve immediately with the dipping sauce. Two things I can’t stress enough is: 1) the importance of having the potatoes completely coated; no holes please, or the mashed potatoes will pour out of the holes once they hit the oil. 2) the importance of the rings being frozen solid before entering the oil…it just helps with the frying, that’s all.

So I just used some Olive Oil... and recipes
Taco Cups. "OK, here I go mouthing off again," says Cas. "And here I go pushing wonton wrappers on you. You can largely ignore the recipe and just grasp the concept. Fill your wrappers in you muffin tins with taco stuff and garnish as you like. BUT HERE'S MY BIGGER TIP: If you BLIND BAKE (empty) the wonton wrappers, you have a shell that can contain things that don't HAVE to be baked. Meaning LIGHTEN UP by filling pre-baked shells with TACO SALAD instead. Go wild, and be true to your tastes!"

Taco Ingredients: 1 ½ t chili oil (found near the Asian ingredients) ½ lb 95% lean ground beef 1 T taco seasoning ¾ c canned black beans, drained and rinsed 16 wonton wrappers (found in the produce section) 5 T + 1 t of queso dip or salsa con queso (I used Wholly Guacamole Queso Blanco) 1 c chunky salsa (I used Wholly Guacamole Medium Salsa) 1 c reduced fat shredded Mexican cheese (I used Weight Watchers brand) Directions: 1. Pre-heat the oven to 375. Lightly mist 8 cups in a muffin tin with cooking spray and set aside. 2. Heat chili oil in a sauté pan or large skillet over medium-high heat, add the ground beef and taco seasoning and brown beef, breaking it up with a spoon. Add black beans and continue to cook, stirring occasionally, for a few minutes until warm. 3. Push a wonton wrapper into the bottom of each of the eight sprayed cups in the muffin tin. Spoon a teaspoon of queso dip into each wonton wrapper and spread across the bottom. Follow by spooning some of the meat/beans mixture into each cup (using about half the total mixture) and then splitting ½ cup of the salsa evenly into each cup. Sprinkle about half the shredded Mexican cheese evenly over the top of each cup. Press another wonton wrapper on top and repeat the layering steps with the remaining ingredients. 4. Bake for 18-20 minutes until golden brown. Let cool 5 minutes before removing from muffin tin. Yields 8 taco cupcakes. No real reason other then the fact that we prefer the taste! (I just saved the leftover meat mixture for taco's) So don't feel like you need to use exactly what is stated in the ingredients list. Just use your best judgment and don't pack 'em too full! Bake for 18-20 minutes until golden brown. Let cool for 5 minutes before removing from muffin tin Add a little bit of guacamole (or sour cream if you prefer) And enjoy! Seriously, you will SO enjoy these! (and I have to say, if I would have left that "queso cheese substitute" out... it would not have tasted the same!)
