Southwestern Egg Rolls with Avocado Ranch Dip -- These were wildly easy to veganize. I used full-size wraps, though; I'm not patient enough to roll up a bunch of tiny wontons. These were a huge hit with all our guests, even the meat-and-potatoes guys! The sauce was only so-so, though -- more like a thin guacamole. After the first go, we just started serving them with our favorite guacamole. Uses Hawaiian rolls to make ham and Swiss sliders. Made these last night (4-6-12) and loved the combination of slightly sweet rolls and savory topping! The only thing I'd change is to cook it a little more than the recipe says after you take the foil off. Just be sure the tops are lightly crispy or it's a bit soggy on top (but even then, was delish!).
