Vegan Banana Bread 1 1/2 C whole wheat flour (spelt or buckwheat) 1 t baking soda 1/4 t cinnamon 1/4 t nutmeg 1/8 t sea salt 1/2 C almond, rice, or soy milk 1/4 C canola oil 1/2 t vanilla extract 3 very ripe medium bananas, mashed 1/4 C dried apricots, chopped Preheat 375. Mix dry. In separate bowl, mash bananas before adding rest of wet ingredients, include apricots. Stir til combined. Add wet to dry. Fold til combined. Pour into greased pan, cook 25 min, or til toothpick comes out clean

5 STARS Vegan Breakfast Potatoes Recipe Pinner says- This made the perfect breakfast today, for a Sunday. I added a few extra veges that I needed to use. Delicious. -- UPDATE: This was one of the best tasting breakfasts I've ever had. I used oil infused with herbs that I found at my local grocery store. I added a handful of daiya cheese. It was excellent and will be a regular dish at my house!
CROCK POT OATMEAL: Place 2 sliced apples, ¼ cup brown sugar, 1 tsp cinnamon, pinch salt in the bottom of the crock pot. Pour in 2 cups of oatmeal, 2 cups of milk and 2 cups water. Do NOT stir. Cook overnight for 8 - 9 hours on low.
