Chris’ Potato Salad 1 pound small red potatoes 1 Tablespoon Balsamic vinegar 1/3 cup mayonnaise 1/3 cup sour cream 1 Tablespoon chipotle mustard 1/4 cup chopped onion 1/3 cup celery, chopped 2 hard boiled eggs, chopped {I actually just crumble them with my hands} 1/2 teaspoon salt 4 strips of bacon, cooked and crumbled fresh chives

Broccomole 3 cups chopped broccoli 1 jalapeno, chopped, seeds removed 2 tbs green onions 1 tsp olive oil 2 ounces fat free cream cheese 1/4 tsp chili powder 1 tbs cilantro 1/4 tsp salt 1/4 tsp black pepper Instructions Cook the broccoli in lightly salted water until very soft. Overcook. Drain broccoli very well. Transfer to a food processor. Add the remaining ingredients and process until smooth, add additional olive oil for a smoother texture. Serve warm

Casa Ole Green Dip ~ 4 Avocados; pitted and mashed, 16oz Light sour cream, 1 can Rotel, 1tbsp Garlic powder, 4oz can Green chili, 2tsp Salt, 1tsp Lemon juice, 3oz Light cream cheese, 2 Jalapeno peppers; diced, 2 Tbsp Cilantro; chopped. Casa Ole Green Dip Preparation: In a blender, combine all ingredients and blend until smooth. Refrigerate for 2-3 hours before serving. I loved this stuff!!

Six ingredient Oh So Easy Taco Dip Here's the recipe: Mix 1 - 8 oz pkg cream cheese, 1 - 8 oz pkg sour cream and 2tbsp taco seasoning. Spread in a 9"x13" dish.
