Baked Ziti & Summer Veggies (Cooking Light, 300 cal for fairly large portion). I freeze 2oz portions of ricotta with 1/4c egg substitute in freezer bags then quick thaw in lukewarm water. Well-drained canned tomatoes work great in winter. The result is *slightly* inferior using zucchini that you sliced and frozen when it was in season, but still good. This is a family favorite.
