Pumpkin Waffles with Apple Cider Syrup. Delish! A few things: There is too much cinnamon for my taste in the syrup. I would half the cinnamon or add more apple cider (that is what I did), I would have liked a little more pumpkin flavor, and my waffles never got crispy. I can't figure out why, maybe it is my cheap-o waffle iron. Or maybe cause I used almond milk instead of cows milk. Anyways, still a great recipe and one I would try again!

I have been playing with pumpkin and all things Apple. These waffles are scrumptious. I make the whole batch and freeze the leftovers between parchment paper. Popping them in the toaster is so easy. Topping them with chopped salted pecans and homemade apple cider syrup is heaven. My husband is addicted!
