Tortellini Broccoli Salad 1 (12 ounce) package refrigerated cheese tortellini 5 slices thick sliced bacon 2 crowns fresh broccoli, cut into bite size pieces (approximately 4 cups) 1/3 cup red onion, diced 1/2 cup dried cranberries 1/3 cup light mayonnaise 1/3 cup light sour cream 1 tablespoon balsamic vinegar 1 tablespoon white sugar 1/3 cup chopped walnuts
Yogurt Broccoli Salad - This is good and an alternative to the typical cheese and bacon broccoli salad. It's definitely best eaten the same day though. We had some leftover, but it just wasn't as flavourful the next day and some of the vegetables had watered out a bit.
