Grilled Eggplant Panzanella: With a recent family trip on the heels of an unexpected move, I am behind on my kitchen experiments so I thought this would be a great time to recycle one of my favorite summer recipes. I love grilling albacore tuna because it's so hearty and thick yet tender and flavorful. Paired with this classic Tuscan bread salad of juicy tomatoes and grilled eggplant and yellow zucchini, it is a perfect light summer meal. Enjoy the retro shots of me and my old kitchen!
