Use egg white and thm brown sugar for an E muffin...11/5/13 Pumpkin Chocolate Chip Muffins - These are a great healthy breakfast muffin (wheat, flax, oats, pumpkin, banana, greek yogurt, and dark chocolate)! Jackson LOVED them, as did my 2 year old. I used 3/4 cup wheat flour and 1/2 cup white flour just because I ran out of wheat. Also added 1/2 tsp. vanilla and a little extra chocolate chips - and used dark instead of semi-sweet. Will def. make again!
