    Completed recipe: Chunky Lentil Bolognese. I loved this recipe, and so did Brandon. I made only a few changes: 1) I used whole wheat pasta instead of potato pasta; (2) I used fresh tomatoes plus tomato paste plus a bit of vegetable stock rather than canned tomatoes; (3) I used sweet peppers rather than celery because that's what I had on hand. This was really flavorful and I didn't miss the meat at all. I will make this again. 4/5

This looks like a copycat recipe of that Olive Garden soup I love. Well, this is the vegan version but I bet it's easy to toss some sausage back in and use chicken broth as the base.
