    Here's my healthier variation - I left out the quinoa (didn't have any) and added spinach, red onions, mushrooms and daiya cheese instead of parmesan, crumbled gluten free bread and baked on greased parchment paper in oven instead of frying at 400 for 15minutes and turned over for 5 minutes. Yum, yum
