White Chicken Chili -- 1 tablespoon vegetable oil • 1 onion, chopped • 3 cloves garlic, crushed • 1 (4 ounce) can chopped green chile peppers • 2 teaspoons ground cumin • 1 teaspoon dried oregano • 1 teaspoon ground cayenne pepper • 2 (14.5 ounce) cans chicken broth • 2 cups chopped cooked chicken breast • 2 (15 ounce) cans white beans ( I use canneli beans) • 1 cup shredded Monterey Jack cheese • 1 can cream of chicken soup
Cream cheese Chicken Chili. SUPER SUPER tasty. Jan's Notes: I added a can of kidney beans, a can of chili beans (pinto with chili sauce), and one can diced tomatoes. I also subbed one fresh jalapeno for can of chilis, and red bell for the green (red are sweeter). I increased broth by 1/2 cup (to compensate for extra beans). You will NOT regret making this recipe. Hubster AND toddler were fans.
White Bean and Tomato Soup. DO NOT use dried beans (the acidity of the tomatoes causes beans to have a tough outer shell even after soaking over night and cooking HOURS past the recommended cook time). Good soup but substitute canned beans. gailmencini.com
