Baked Oatmeal. But I made changes: 1) Used old-fashioned oats instead of quick 2) Cut the sugar to 3/4 cup 3) Increased the milk to 1 1/2 cups and the eggs to 3 4) Added a heaping 3/4 cup of raisins and 1/2 cup pecan pieces 5) Let it sit 20 minutes stirring 4 times (to soften the old-fashioned oats) before baking 6) Baked for only 30 min instead of 40
Cinnamon apple baked oats - 8 portions for a whole breakfast. put in large muffin cups and take to go. 2 cups steel-cut oats 1 1/2 tsp. baking powder 3/4 tsp. salt 2 cups diced apples (I used Granny Smith) 3 eggs 2 cups fat-free milk 1/2 tsp. vanilla extract 3 Tbsp Splenda brown sugar blend (or 1/3 cup light brown sugar) 1/2 tsp. ground cinnamon 1/4 tsp. nutmeg
Baked Oatmeal with Bananas and Berries - made this with strawberries and bananas and 1/8 cup choc chips (also added 1 tsp baking powder and just 1 tsp cinnamon). It was perfect!
