Red Curry Lentils — Pinch of Yum I made this for my vegan daughter and s-I-l, and they raved about it...said it was restaurant quality. It's fairly easy, and I made it early in the day and stuck it in the crock pot to keep warm. Delicious with brown basmati rice.
Skinny Mushroom Stroganoff - Made this for the first time on 10/22/13. Loved the recipe! However, hubby suggests less of the "wild" mushrooms - will stick to a combo of shiitake, white, and baby bella from now on. Might need a little extra flour to thicken the sauce!
