This is a good, healthy meal that crams in a ridiculous amount of protein and fiber. This takes a little time since you have to cook the quinoa, sauté the peppers, onions and zucchini, mix it all together, and then bake for 40 mins; however, overall, this makes a great comfort meal that's a perfect way to incorporate a lot of nutritious ingredients.
