Black Bean and Brown Rice Burgers/The Everyday Veggie. a little food can actually feed a lot. This recipe, with just 1/2 cup rice, 2 cups beans, 1 onion and not even a whole zucchini, makes enough to feed 4 as a main meal, with a little salad added in. I’ll be eating these for lunch for the rest of the week!
Homemade Veggie Burgers That Don't Suck. My favourite veggie burger is from the Auld Spot pub in Toronto; they use lentils and cumin in their house-made mix. This mix has beans, barely, and cashews, and uses marmite and soy for depth of flavour. I'm intrigued. It's definitely labour-intensive prep, but the end result seems worth it...
