    Sesame-Ginger Whole Grain Yam Rolls

    1.5 hrs to make • Serves 4

    Produce

    1/2 Cucumber
    1 1-inch piece Ginger, fresh
    1/4 tsp Ginger, powder
    4 sheets Nori
    2 lbs Sweet potatoes or yams

    Condiments

    1/4 cup Almond butter, creamy unsalted
    2 tsp Honey or agave nectar
    1 Soy sauce, Low-sodium

    Baking & Spices

    1/2 tsp Salt
    2 tsp Sesame seeds

    Oils & Vinegars

    2 tbsp Olive or melted coconut oil
    1 tsp Rice vinegar
    2 1/2 tsp Sesame oil

    Liquids

    6 cups Water

    Other

    1 cup Uncooked whole grains (i used bob's red mill grande whole grains, but single grains, such as kamut, are also great; use quinoa, sorghum or brown rice for gluten-free), rinsed
