Strawberry Kale Salad with Nutty Granola Croutons

Vegetarian • Gluten free • 45 mins to make • Serves 2

4 Radishes, medium thin and roughly chopped
1/2 lb Strawberries
8 oz Tuscan kale or regular curly kale

Refrigerated

1 Egg white, large

Condiments

1 tbsp Dijon mustard, smooth
1 1/2 tsp Honey
1 tbsp Honey or agave nectar
2 tbsp Lemon juice

1 cup Oats, old-fashioned

Baking & Spices

1/4 tsp Cayenne pepper
1 tbsp Fennel seeds
1/2 tsp Sea salt, fine-grain
1 Sea salt and freshly ground pepper
1/4 cup Sesame seeds, raw

7 tbsp Olive oil

1/2 cup Almonds, whole
1/2 cup Pistachios, raw
