    I made this using 2 1/4 cups featherlight flour mix and 1/2 c oat flour, and they turned out heavenly!

    Is the xanthan gum absolutely necessary i've read it is not recommended for those with digestive problems.

    Yes, it is necessary. Most people can tolerate xanthan gum in the small quantities it's in bread products. Those who have to avoid corn can use guar gum instead, and for those wishing to avoid it altogether, there is a recipe called "pixie dust" that I've found to be a good substitute. But you need something to help hold it all together, or it will just crumble to pieces. Pixie dust recipe:
