Skip the garlic, shallots (use the green end of chives), & mushrooms. Switch the ricotta out for a thick sauce made of butter, rice flour, soy milk, & parmesan/romano cheeses. I think that'll meet the low FODMAP *AND* delicious requirements for a meal! :)
