Chicken and Wheat Berry Salad

Citrus Apricot couscous 1/4 c whole wheat couscous 2/3 c boiling water 1 T orange juice 2 T dried apricots, chopped 1 t grated orange zest Directions Serving Size: 1/3 cup Volume: 2/3 cup Prep Time: 2Minutes Total Time: 10 minutes Place the couscous in a medium-sized oven safe bowl. Pour boiling water over the couscous ad then add the orange juice, apricots, and orange zest. Stir, then cover and let stand for 5 minutes. Fluff the mixture with a fork and serve immediately.
