2 Pastured eggs, organic

Baking & Spices

1/2 cup All-purpose flour
2 tsp Baking powder
1 tsp Baking soda
3 tbsp Confectioners sugar
8 tsp Granulated sugar
1/2 tsp Salt
4 tsp Vanilla extract, pure
1 cup Whole wheat flour

Oils & Vinegars

4 tsp Olive oil, extra virgin


1 1/2 cups Greek yogurt, organic low-fat plain
1/2 cup Organic 1% milk

Pumpkin Pancakes - •2 1/2 cups whole wheat flour •2 1/2 cups water •1/2 cup non-dairy milk (I used unsweetened almond milk) •2 tbsp baking powder •1 tsp salt •1/2 cup organic canned pumpkin •1/2 tsp cinnamon •1/4 tsp nutmeg •1/4 tsp allspice •1 tsp vanilla extract •1/2 tsp baking soda •2 tsp apple cider vinegar •Whatever pancake toppings you like (Earth Balance, syrup, agave nectar, jam, fruit, etc.)

The kids won't realize they are whole wheat! You can make extra and freeze for the week.
