Serrano Spicy Salmon & Crispy Rice

Serrano & Jalapeño Spicy Salmon on Crispy Rice 👌🏻 these were so good and easy to eat! Obsessed with the serrano jalapeño hot sauce btw 🥲.
    Yields about 12-14 rounds.
    • Ingredients:
    • 8 oz sushi grade salmon.
    • 1/4 cup Japanese mayo (kewpie).
    • 3 tbsp serrano/jalapeño hot sauce (recipe below).
    • 1 tsp tamari.
    • 1/2 tsp cane sugar.
    • 1 tsp sesame oil.
    • 2 tbsp scallions.
    • 1 avocado (sliced).
    • sesame seeds.
    • 1 cucumber (sliced).
    • 1 mango (sliced).
    •1 cup calrose rice (wash it really well, 3-4 times until the water is no longer white. Soak it for about 20-30 min and cook with 2 cups water until done. season it with 3 tbsp rice vin, 2 tbsp cane sugar, pinch of salt).
      Jalapeño Serrano Hot Sauce:
      • 3 serranos (chopped, left seeds).
      • 2 jalapeños (chopped,left seeds).
      • 4 green onions (chopped, separate green and white part).
      • 2 garlic cloves.
      • 1/4 onion.
      • 1/2 tsp oregano.
      • salt/pepper to taste.
      • 1/2 c white vinegar.
      • 1/4 c water.
      • 1/2 lemon.
      • 1/2 bunch cilantro.
      •2 tbsp honey.
        Topping sauce:
        • 2 tbsp cilantro.
        • 1 lemon.
        • 1 tsp fresh ginger.
        • 1/2 orange.
        •3 tbsp tamari.
          Directions:
          • 1.- place the rice in between 2 sheets of parchment paper. Let sit in the freezer for 1 hr. Cut into rounds and let sit in the freezer 30 min.
          • 2.- sautee the onion, white part of scallions and garlic for 5 min on medium with a bit of avocado oil. Add in jalapeños and serranos, sautée 5 min. Add in oregano, salt & pepper with the vinegar and water. Bring to a simmer and let sit 5-7 min. Blend with the lemon, honey, cilantro and green part of scallions.
          • 3.-mix the Japanese mayo, hot sauce, sugar, tamari & sesame oil, add in the salmon & scallions.
          • 4.-fry rice with avocado oil in a preheated cast iron until crispy on both sides. About 10-15 min total on medium high. Watch that it doesn't burn.
          • 5.-Mix everything for the topping sauce.
          6.-Add avocado to the crispy rice, cucumber, mango or avocado, the salmon, sesame seeds, topping sauce & enjoy.
