Baked Oatmeal Cupcakes To Go (makes 24-25 cupcakes) Adapted from: Cookie Dough Baked Oatmeal. 5 cups rolled oats (400g) 2 1/2 cups over-ripe mashed banana, measured after mashing (For all substitution notes on this recipe, see nutrition link below.) (600g) 1 tsp salt 5 NuNaturals stevia packets (or omit and use 5 tbsp liquid sweetener of choice–such as pure maple syrup or agave–instead) optional: 2/3 cup mini chocolate chips 2 2/3 cups water (640g) (If using the liquid-sweetener option, scale water back by 1/3 cup.) 1/4 cup plus 1 tbsp oil (45g) (I really like coconut, but veg oil will also work. For lower-fat substitution notes, see nutrition link below.) 2 1/2 tsp pure vanilla extract optional add-ins: cinnamon, shredded coconut, chopped walnuts, ground flax or wheat germ, raisins or other dried fruit, etc. Preheat oven to 380 F, and line 24-25 cupcake tins. In a large mixing bowl, combine all dry ingredients and stir very well. In a separate bowl, combine and stir all wet ingredients (including banana). Spicy Sausage Pasta 1 tbsp olive oil 1 lb smoked sausage 1.5 cups diced onion 2 cloves garlic, minced 2 cups low-sodium chicken broth 1 (10 oz) can Ro-Tel tomatoes and green chiles, Mild 1/2 cup heavy cream 8 oz penne pasta 1/2 teaspoon salt and pepper, each 1 cup Monterey Jack cheese, shredded 1/3 cup thinly sliced scallions 1. Add olive oil to an oven-safe skillet over medium high heat until just smoking. Add sausage and onions and cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds. 2. Add broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes. 3. Remove skillet from heat and stir in 1/2 cup cheese. Top with remaining cheese and sprinkle with scallions. Bubble pizza - I put this together this morning and kept in the fridge until dinner. My kids don't like a lot of sauce or toppings so I just spooned a little sauce over the biscuits. I baked at 375* for about 18 minutes covered with foil. Then I uncovered & baked uncovered for another 10 minutes. Easy and delicious. I will make this again but next time I will coat the bottom of the pan with garlic butter and maybe a *little less* cheese ... just so we can actually see the biscuits! ;)

Skillet Enchiladas- This recipe was super easy and quick. I left out the onion because we aren't big onion fans and added in a packet of taco seasoning to the ground beef. I also didn't use the whole can of enchilada sauce, had about a cup left over. GREAT IDEA. It was just the right texture, any more sauce would have been soupy. It was a hearty tasty one skillet meal. Even the boyfriend ate it up! This meal was super affordable, very fast to make, and tasty. Use corn tortillas

This is NOT low carb, but for my family on Christmas morning. Slow Cooker Breakfast : 12 eggs, 32 oz bag of frozen o'brien style hash browns, defrosted and rinsed , 1 lb sausage, bacon or ham (or any combo you like), 1 med onion, diced, 1 bell pepper, diced (use whatever color you like best), 3/4 c 2% milk, 3/4 c sour cream, 1 tsp dry mustard, 1 tsp garlic powder, salt and pepper to taste, 2 c shredded cheddar cheese. Cooks 8 hours on low in a crock pot. Ready when they get up!

EASY DINNER RECIPE: One Pot Tomato Basil Pasta Throw it all in the pot, INCLUDING the uncooked pasta, and cook! Bring it to a boil, then reduce to a simmer. The starch leaches out of the pasta and makes a rich, warm sauce for the noodles. The other ingredients cook right along with the pasta Ingredients Ingredients: 12 ounces pasta (We use whole grain linguine) 1 can (15 ounces) diced tomatoes with liquid 1 large sweet onion, cut in julienne strips 4 cloves garlic, thinly sliced ½ teaspoon red pepper flakes 2 teaspoons dried oregano leaves 2 large sprigs basil, chopped 4½ cups vegetable broth (low sodium) 2 tablespoons extra virgin olive oil Parmesan cheese for garnish, optional Instructions Place pasta, tomatoes, onion, garlic, basil, in a large stock pot. Pour in vegetable broth. Sprinkle on top the pepper flakes and oregano. Drizzle top with oil. Cover pot and bring to a boil. Reduce to a low simmer and keep covered and cook for about 10 minutes, stirring every 2 minutes or so. Cook until almost all liquid has evaporated – I left about an inch of liquid in the bottom of the pot – but you can reduce as desired . RECIPE: Tomato Basil Pasta - all in one. I just made this. It's super easy & it's the first pasta dish Rolando hasn't complained about. Normally if I make pasta he says "are we out of groceries again?" He was heaping a second portion of this on before he had even finished round one! I used italian tomatoes, omitted mushrooms and didn't have fresh basil so used 1tsp dried instead. So this ones a keeper!

Bubble Up Enchilada Casserole Nutrition Info: Calories 390 | Fat 11.5g | Carbohydrate 36g | Fiber 2g | Protein 33g Weight Watcher Recipes 6 points (old points) Serves 6 1 pound ground turkey 1 (10 ounce) can enchilada sauce 1 (8 ounce) can tomato sauce 1 can reduced fat refrigerator biscuits 1 ¼ cups shredded low fat Mexican Cheese Preheat oven to 350 degrees. Brown turkey and drain if needed. Mix in a can of enchilada sauce. Cut the refrigerated biscuits into fourths and stir them in the meat mixture. Then you just dump it all in a greased casserole and bake for 25 minutes. Take out of oven and sprinkle cheese on top. Bake an additional 10 minutes. Let stand for 5 minutes before serving.
