Ok, these aren't gorgeous but I'm going to post them anyway. I decided to work on a Deep S SC filled treat and these came out really good. For the filling I used 2 T softened butter, 2 T EVCO, homemade Truvia, dash of salt and 1/4 scoop of protein powder. For half the batch I used this plain, vanilla buttercream filling and then for the other half I added some coffee extract.

THM - Chocolate Chip Coconut Cookie (like a muffin in a mug (MIM) but more cookie texture) - In a Coffee cup mix - 1 egg whipped, 1 TBS Almond Meal/Flour, 1 TBS Golden flax meal, 1 tsp baking powder, 1/2 TBS coconut flour, 1 TBS coconut flakes(optional), 1 TBS 85% dark chocolate chips. 1/2 TBS soft or melted butter. 1 pack truvia, 1 TSP xylitol, 1 TSP chopped pecans (optional) Mix all together well with a fork, microwave 1 minute, let sit for 5 minutes & enjoy. Double the THM E Pancake Batter pg. 223. Add 4 tsp of THM Sweet Blend, 1 tsp of Almond Extract, 2 tsp vanilla to the pancake batter. Cook down the frozen blueberries in 1 1/2 cups of water & 2 tsp of THM Sweet Blend for about 30 mins. Pour off & save the extra juice from the blueberries. Spray a 9x13 pan, pour blueberries down first then pancake batter on top. Baked 35-40 mins for 350 degrees. Run knife around edge & flip over. Cut into 12 squares! I love the THM batter! Soooo versatile!

Sour Cream Beef Enchilada Casserole: 2 lbs taco meat, 12 low carb tortillas, onion & cheese, roll up & put in a baking dish. Take 1 - 8 oz 1/3 fat cream cheese, 1 cup of sour cream, 1/2 cup water or chicken broth, 1 jalapeño seeded & cored, 1 handful of cilantro, 2 tsp garlic powder & onion powder, salt to taste & blend in a blender. Pour over tacos, cover with cheese & a few onions! Cover with foil. Bake 350 degrees for 30 minutes. Most delicious thing ever!!! It's an S for sure!

Brownie in a Bowl (S) I tweaked my favorite Cookie in a Bowl Recipe and made this brownie in a bowl!!! 2 tbsp melted butter 1/4 cup almond flour 1 tbsp cocoa powder 1 egg yolk (or 1 whole egg if you like more fluffy) 1/2 tsp baking powder 1.5 dropper full liquid stevia or favorite sweetener 1 tsp vanilla 1 small chunk of 85% dark chocolate chopped (optional) Pecans (optional) Melt butter, stir ingredients together, microwave for one min! Voila!
