I finally made this! Be sure to melt chocolate on mid-power, stirring every 30 seconds for about 2 minutes. I used 2 cups of chocolate chips. Then I poured it in the ice cube tray, stuck the strawberries in (some were cut in half) and then poured the remaining chocolate on top. (RP)

Hi Hat Cupcakes have consumed my cupcake thoughts since I first saw their tall chocolate dipped tops online after I started blogging. But, I have to tell you, I’ve been nervous to make them. They scare me. I knew for sure I would screw them up and end up with a melted mess. But this weekend, I tried them. Mainly because I tasted my very first one a couple of weeks ago. Seeing them in person fueled my fascination. So I decided to use the only recipe I remembered seeing. It’s from Martha Stewart.com and it did not disappoint. > Update: I just realized this recipe is also from the book, Cupcakes! by Elinor Klivas - Confused it with Martha’s Cupcake book in her online description. Why I don’t have this one already, I don’t know. < Chopped chocolate. A perfect way to start. I really liked this cupcake recipe. It’s great topless, too. But even better with the frosting. I used a disposable pastry bag with an Ateco #807 tip. Basically one with a huge round opening. If I had paid attention to the directions beforehand I don’t know if I would have been as eager to get started. 12 minutes later and a candy thermometer in check to make sure the frosting formed stiff peaks at the right temperature. Yikes. Actually, it never made it to just the right temp, but after 12 minutes… I was over holding the hand mixer. So I took a leap of faith it would work and piped it on the cupcakes… as tall as I could get it. The cupcakes went in the freezer while I prepared for the scary part. The dipping. You’d think this part would be smooth sailing. But I was skeptical. I mean look at all that thick white frosting. It’s definitely going to melt when I cover it in chocolate. Melted heavy chocolate. Right?! One bag of semi-sweet chocolate. I used the mini chips. And melted them in the microwave with three tablespoons of vegetable oil. Tasty. Melt them on medium-low in 30 second intervals and stir in between until melted and smooth. Then wait a few minutes to make sure the chocolate isn’t hot. Now, take a deep breath and grab one of the cupcakes from the freezer. Turn it upside down and slowly submerge the entire top in melted chocolate. Okay, here goes… A little more…… More… Keep going… I’m closing my eyes. Now… take a deep breath and lift it out. Holy cupcakes… it worked. It totally completely worked. And it’s beautiful. Use a toothpick to touch up any spots at the base of the cupcake that may not have been covered… controlling your excitement… And then go again. And again… And again. We’re having fun now. If you use a small, deep bowl, it will make the dipping easier. The one I used was a cup leftover from Easter egg decorating. Mini hi hats anyone? Aside from the obvious first impression *wink wink*… these are amazing. Place the dipped cupcakes in the freezer for a few minutes to let the chocolate harden and then refrigerate until ready to eat. You want to see inside don’t you. I did too. Oh my. I’m still amazed. Don’t be afraid to make some.

Avocado/spinach grilled cheese Green Goddess Grilled Cheese Sandwich based on all those gorgeous green goddesses out there… makes 1 sandwich Ingredients 2 slices bread (we used a white bread, but one filled with lots of different whole grains and seeds would be *awesome*) 2-3 tablespoons Green Goddess Herb Pesto (recipe below) 2 slices mild white melty cheese like mozzarella handful fresh baby spinach ¼ avocado, sliced 2 tablespoons goat cheese, crumbled olive oil (and butter if you’re so inclined) Directions Spread about 1 tablespoon of Green Goddess Herb Pesto onto each slice of bread (2 tablespoons total, but if you’re sensitive, go light, the pesto is STRONG). On one slice of bread, add 1 slice of cheese, sliced avocado, crumbled goat cheese, spinach, second slice of cheese, then top it with second slice of bread. Press together gently. Heat 1 tablespoon olive oil in a frying pan over medium low heat. (If you want to use butter, add it to the oil and let it melt). Add the sandwich to the oil and cook until bread is golden brown. Press down on the sandwich lightly, then flip the sandwich over and cook until second side is golden brown. Green Goddess Herb Pesto Ingredients 1 clove garlic 1 (or 2 if you’re ballsy) anchovy fillet (in oil) ½ small shallot, chopped (about 1 tablespoon) 1 teaspoon lemon juice handful chopped fresh Italian parsley handful chopped kale 2-3 tablespoons chopped fresh tarragon 1 tablespoon chopped chives ¼ cup olive oil salt and pepper to taste Directions Pulse garlic, anchovy, and shallot in food processor until chopped. With the food processor running, add lemon juice, parsley, kale, tarragon and chives. (It won’t process very well yet, don’t worry). Very slowly drizzle in olive oil until kale and herbs get sufficiently chopped and everything is the consistency of a pesto. You may need more or less of the olive oil depending on how big a “handful” of herbs is to you. You can also turn off the food processor and push herbs down the side of the bowl with a spatula every once in a while. Season to taste with salt and pepper (You probably won’t need too much salt if you used 2 anchovies). (This makes a lot, but you will use it all for other things. We added more olive oil to make it back into a salad dressing.)

Cookies and Cream Oreo Bark September 19th, 2011 § 20 Cookies and Cream Breakaway ~ A 20 minute, 2 ingredient, sweet and simple dessert filled with Oreo goodness. Yes, another fast and easy dessert recipe that’s perfect for your holiday baking. Oreos are a favorite in my home. I have to admit I’m not necessarily as big of a fan as Matt and the boys when it comes to eating them straight out of the bag. But when it comes to Oreos in baked goods, I can out eat them like how most birds can eat twice their weight. Cookies and Cream Breakaway I’m keeping with fast and easy, since my workload seems to be multiplying ten-fold lately. It’s so bad that-tsk, tsk; my interview with the third exiting chef-testant of Bravo’s Top Chef Just Dessert was just posted last week alongside the two who were cut in episode 4. Yikes! So for those of you that are following the show and the interviews (posted over at Endless Simmer), I promise that the this week’s interview will be posted by Friday-at the latest. As you can see, I have a little problem with taking on more than I can manage at times. I’m sure all of you are much better at managing time than I am. That said, I’m also sure we can all find comfort in a sweet and simple dessert that is as easy to make as melt, mix, and chill. A few notes: •To shave off even more time use mini Oreos to bypass chopping regular size ones. •If white chocolate doesn’t suit your taste, use any chocolate that does. •You can leave the top bare but keep in mind it will look slightly grey from the mix of black Oreo crumbs against the white. To avoid the unappetizing grey tint either drizzle the top with chocolate or sprinkle finely crushed Oreos on top. Cookies and Cream Breakaway Preparation: Line an 8×8 pan with enough parchment or wax paper for a 1 inch overhang on each side. •10oz. Ghirardelli white chocolate chips •15 regular size Oreos, plus 3 more for topping Instructions: 1.Place chocolate in a double boiler over low heat and stir continuously, until chocolate is completely melted. Transfer chocolate to a heat proof bowl and cool for 5 minutes. Add chopped Oreos and stir to combine. Pour mixture into pan. Use a spatula to smooth out top. 2.Finely chop remaining Oreos and sprinkle on top. Chill for about 10 minutes until chocolate becomes solid. 3.Lift whole bark out of pan by holding onto parchment or wax overhang. Split bark into pieces with a fork.

Cute holiday treat idea!! 1 lb large strawberries, 8 oz package cream cheese, softened 3-4 Tbsp powdered sugar, 1 tsp vanilla -Rinse and cut around the top. Remove top, enough for hat. Clean out the whole strawberry if necessary -In a mixing bowl, beat cream cheese, sugar, & vanilla until creamy. Add cream cheese mix to a piping bag. Fill the strawberries with the mixture. -Once strawberries are filled, top with the 'hats.' Decorate according to photo. Refrigerate until served.

Peppermint Bark Snowflakes My friend Andrea authors one of my favorite blogs "Under a Blue Moon", a regular feature of her blog which I particularly like is called Friday's Favorites in which Andrea shares a collection of intriguing items she has found from around the web. Recently she linked to a treasure of a blog called "Baked by Rachel". Rachel shared this wonderful technique of making Peppermint Bark candy using a silicone food mold. Just like Andrea, I thought this idea was brilliant ~ rather than just breaking the candy into irregular shards. Rachel has an excellent step-by-step tutorial on her blog, complete with photos. (See end of this post for the link.) The process is simple using the typical Peppermint Bark recipe. Choose your favorite type of chocolate; milk, semi-sweet, dark etc., white chocolate, crushed peppermint candies (or candy canes), a small amount of vegetable oil, and a few drops of Peppermint extract. But instead of spreading the chocolate layers on a sheet pan, the melted chocolate is placed in a silicone mold. First the dark layer, then a thin sprinkling of crushed peppermint, and placed in the refrigerator until firm. The melted white chocolate is spread on top of the dark layer and sprinkled with larger pieces of crushed peppermint, then back into the fridge to harden. As soon as the chocolate is firm the candy snowflakes are pushed out of the flexible silicone mold with no problem. As Rachel suggested I used a small cookie scoop to portion the melted chocolate into the molds with a minimum of mess, that worked really well. Something that I found useful was to use a toothpick to swirl through the chocolate in the mold to help move it into the mold's details. Stacked into little cellophane bags, or candy tins I think these would make a great little gift from your kitchen. Baked Oatmeal Casserole Preheat oven 375. In bowl, mix 2 cups rolled oats 1/3 cup brown sugar 1 tsp baking powder 1 tsp cinnamon 1/4 tsp salt 1 cup walnut pieces. Add 1 cup fresh fruit (any) + (reserve 1/4 cup), 1/2 cup milk chocolate chips. Put in sprayed 10 x 7 pan. Mix separately 2 cups milk, 1 large egg, 3 Tbsp butter, melted and 1 Tbsp vanilla. Pour mix over top. shake to distribute. Add reserved fruit and 1 sliced banana. Sprinkle 1 Tbs brown sugar Bake 35-40 min. Serve 6.
