Layered Ratatouille! Such a PRETTY dish. This recipe is baked rather than cooking on the stove top. I've always wanted to try this. UPDATE: Tried this last night, very tasty! I used leftover pasta sauce as the bottom layer, rather than tomato paste. Mine didn't come out quite as pretty because my eggplant was pretty large. I wouldn't add the red pepper flakes next time--came out way to spicy.
