Cracker Barrel Chicken and Dumpling "copycat recipe" I love CB's chicken and dumplings recipe so I wanted to try to get as close it as possible. This was a good recipe, but the dumplings were only slightly similar to that of CB's. We will probably make this recipe again, but I know now not to expect a copycat type recipe. ~kmcg

Homemade Chicken and Dumplings Omg. This looks like it may be just like my Granny made! And though she taught me, I was young and dumb and didn't pay attention. I have to try this ASAP. Only difference is she'd make her own stock from a boiled chicken. But the thing that got me about THIS blog was that in the photos the hands making the dumplings look so exactly like my granny's hands that I couldn't believe it. She's been gone 10years as of this week and I've cried on more than one occasion thinking how I'd never taste those dumplings again bc she was gone and I hadn't paid well enough attention. I'm making these this week to see if my heart ache can be eased with some comfort food. :). ~KimG

Clean Eating Chicken And Dumplings (Makes approximately 5 quarts) RECIPE UPDATED 7/29/11 I removed the celery seed from the ingredient list because I found that the finished product has a mush smoother flavor without it. It’s not as “sharp”. I also switched the regular chicken broth to low sodium and updated the nutrition info below to reflect that change. Lastly, I no longer use soy milk for the dumplings. But any milk will work. I also updated the instructions for cooking this in a crock pot. Stew Ingredients 6 cups low-sodium chicken broth (no sugar/dextrose added) 1 tbsp. marjoram 1 tbsp.. garlic powder 4 boneless, skinless chicken breasts – cut into small chunks 2 tbsp. olive oil 1 large onion – peeled and diced 4 large carrots, peeled and sliced 4 stalks celery, cleaned and sliced Dumpling Ingredients (This is a recipe redo. Find the original here.) 2 cups whole wheat pastry flour 1 tbsp. baking soda 1/2 tsp. salt 3 tbsp. olive oil 1 cup milk (any milk you typically use is fine. I currently use unsweetened almond milk.) STEW DIRECTIONS Step 1 – Pour the broth into your crock pot (or into a large soup pot if cooking on a stove top) Step 2 – Add the marjoram and garlic powder to the broth and turn the crock pot to high (stove top, bring to a slow boil) Step 3 – In a pan, combine the olive oil, onion, carrots and celery. Saute until the onions are translucent. Step 4 – Add the veggies and cut up chicken to the crock pot (or soup pot). DUMPLING DIRECTIONS Step 1 – In a large mixing bowl, combine the flour, baking soda and salt. Whisk to blend well. Step 2 – Pour in the oil and milk and mix with a wooden spoon. Step 3 – (Be sure the broth is hot before adding the dumplings to the pot) Using two teaspoons, scoop up and round off your dumplings and scrap into your pot. (Just like making drop cookies) STOVE TOP – Boil until the dumplings and chicken are cooked. CROCK POT – I cooked this on high for about 3-1/2 hours. But if you need to cook it longer because you are leaving for the day (or cooking overnight), turn the crock pot to low and cook until the dumplings and chicken are cooked through. (My guess is about 6-8 hours). It’s important to know how your crock pot cooks here. Every crock pot is slightly different. Also, the dumplings will look a little odd after they have been cooking at the top of the stew all day. They create a sort of “crust-like” cover. Just break them up with a wooden spoon and stir them into the stew to finish cooking. Simply break one open to be sure it’s cooked all the way through. Eat and Enjoy! Crock Pot Chick and Dumplings from Bubble Crumb: 4-6 boneless skinless chicken breasts, 2T butter, 2 can cream of chicken soup, 1 can chicken broth, .5~1 diced onion, 4 grands flaky refrigerator biscuits. Mix everything except biscuits and cook for 4-6 hrs. Break up chicken with fork as gets tender.
