CASHEW CHICKEN Made by @cookingclassy Follow her. She is amazing @cookingclassy Ingredients 1 1/2 lbs boneless skinless chicken breasts, diced into 1-inch pieces 1 1/2 Tbsp cornstarch, divided 1 1/2 Tbsp + 1 tsp Olive Oil Salt and white or black pepper 1/3 cup low-sodium chicken broth 3 Tbsp hoisin sauce 1 Tbsp low-sodium soy sauce 1 Tbsp rice vinegar 1 Tbsp honey 3 green onions, chopped, whites and greens divided 4 cloves garlic, minced 2 tsp finely grated, peeled fresh ginger 2/3 cup lightly salted cashews Red pepper flakes, to taste (optional) Directions In a mixing bowl, toss chicken with 1 Tbsp cornstarch to evenly coat. In a large skillet, heat 1 Tbsp vegetable oil over medium-high heat. Once oil is hot, add half of the chicken, and cook stirring frequiently, until chicken is is golden brown and has cooked through, about 4 minutes. Transfer chicken to a plate (leaving the remaining oil in skillet - it should be about 1 tsp) and add another 1/2 Tbsp vegetable oil to skillet. Cook remaining chicken until golden brown and cooked through, then transfer to plate with first batch of chicken. In a mixing bowl (or liquid measuring cup used to measure chicken broth), whisk together chicken broth, hoisin sauce, soy sauce, rice vinegar, honey and remaining 1/2 Tbsp cornstarch until well blended. Heat remaining 1 tsp vegetable oil in skillet over medium heat. Add green onion whites, garlic, ginger and cashews and saute until cashews are golden brown, about 1 minute. Pour in hoisin sauce mixture, season with salt and pepper to taste, and cook, stirring constantly, until sauce thickens. Remove from heat, add chicken to sauce and toss to evenly coat. Serve warm with white or brown rice or quinoa and top with greens of green onions and sprinkle with red pepper flakes if desired.

Rustic Chicken with Garlic Gravy. I Use 2 chicken breasts and cut them into thirds then cook them but make the same amount of gravy the recipe calls for and serve over mashed potatoes. I also cook the chicken in a separate pan initially. The first time I didn't and the gravy ended up having the black char pieces in it. The wine in the gravy really gives it good flavor. Courtesy of Maza Cooking Journals we just LOVE love love this recipe and we LOVE eggplants. First, let’s talk a little bit about eggplants, yes they are a “nightshade” veggie, which some people say is a bad thing (i.e. potatoes, peppers, etc). We disagree! According to the geniuses over at WHFoods, “Eggplant is an excellent source of digestion-supportive dietary fiber and bone-building manganese. It is very good source of enzyme-catalyzing molybdenum and heart-healthy potassium. Eggplant is also a good source of bone-building vitamin K and magnesium as well as heart-healthy copper, vitamin C, vitamin B6, folate, and niacin. Eggplant also contains phytonutrients such as nasunin and chlorogenic acid. Eggplant also contains phytonutrients such as nasunin and chlorogenic acid” (http://bit.ly/16VWhI). Ok so now that we’ve made our point, here’s the recipe. You will need: 1 large eggplant 3 large tomatoes, to match the diameter of the eggplant 0.4 lbs feta, crumbled 1/2 cup fresh basil leaves juice of half lemon 2 garlic cloves ½ extra-virgin olive oil Kosher salt Freshly ground black pepper to taste Directions: Cut of the eggplant crosswise into ½” thick rounds. Lightly season them with salt and leave them for 30 minutes on a side to let water to come out of the eggplant. Once ready drizzle some olive oil on top of each slice and grill them on a lightly oiled grill rack for 2 -3 minutes each side. Blend the basil leaves with 4 tablespoons olive oil, 2 garlic cloves, lemon juice and 1 teaspoon salt in an immersion blender until smooth. Cut the tomatoes crosswise to 1/4” thick rounds. Lightly oil the baking pan. Arrange 4 eggplant rounds side by side. Spread 1/2 tablespoon of the basil-garlic mixture on top of each one, then generously sprinkle feta crumbs. Top each with tomato rings. Add another layer of eggplant, basil spread, feta and tomato rounds and top with the rest of the crumbled feta. Preheat the oven to 400F. Drizzle some olive oil on top of each stack and bake for 15 minutes. There you have it! A healthy, yummy recipe that can be used as an appetizer at a dinner party, as a fancy snack or as dinner!
