I've made these for years so going to go ahead and put the recipe here. I use stove top stuffing and flatten mine a little to make them crispier. We've never served with dipping sauce either. Baked Mac and Cheese- a crock pot recipe!
And my traditional all-time favorite comfort food... Baked Mac and Cheese
crockpot macaroni and cheese 1 1/2 cups milk One 12 oz can evaporated milk (I used skim, evaporated milk keeps the egg and milk from curdling) 1/4 cup (1/2 stick) unsalted butter, melted, cooled to room temp 3 large eggs 1/2 tsp salt 3 cups (12 oz) shredded cheese (I used an Italian blend, recipe calls for Italian fontina cheese) 1/2 pound elbow macaroni or mini penne tubes, par cooked and drained (this means cook them for about five minutes until tender but not completely cooked) Freshly ground black pepper to taste 1/2 cup grated Parmesan cheese Spray the inside of your slow-cooker with cooking spray or grease it with olive oil. Combine milk, evaporated milk, eggs, butter, and salt in slow-cooker and whisk until until smooth (or you can use an immersion blender to do the whisking for you). Add the shredded cheese (not the Parmesan) and macaroni, sprinkle with black pepper (and whatever other spices you want to use). Stir gently with a spatula to coat evenly. Home About me... And my second official Magazine/Cookbook day! awhoohoo! This week I wanted something easy because I was focusing on cupcake making.... more on that later ☺... So I picked a recipe from a cookbook that I have had for awhile but have actually never used, "Not Your Mother's Slow Cooker Recipes for Two" by Beth Hensperger. It has lots of yummy ideas for crockpot recipes. I selected a mac and cheese recipe because my fridge runneth over with cheese right now. The recipe calls for shredded Italian fontina cheese, I had left over shredded Italian four cheese blend which I figured would work just as well so I subbed it in the recipe. My total prep time was about ten minutes and that included precooking the macaroni noodles. Not bad! The mac and cheese cooks relatively fast compared to most slow-cooker recipes, it was completely done in about two and a half hours. As far as taste goes, it was probably about an 8 out of 10. I think that if I had used the fontina cheese it would have been more flavorful. I also added in some spices as the recipe only calls for ground black pepper, I put in some oregano, and a sprinkle of chili powder. I wish I had some fresh oregano to sprinkle on because that would've been amazing! Maybe mix in some chopped baby tomatoes too... Next time! And there will be a next time because all in all this was a good basic mac and cheese recipe and so easy to throw together. So yes, 8 out of 10 and it's a keeper. What did you cook today? Before dishing it up, I sautéed some bread crumbs with olive oil and sprinkled them over the top to make it a little fancier.

(Wonder if it would work with olive oil instead) another pinner says: Salmon in foil packet - Tin foil, lemon, salmon, butter, salt and pepper – Wrap it up tightly and bake for 25 minutes at 300 °. I first made this 6-11-12 and it was so good that it's the only way we cook salmon now! I also added a sprinkle of Old Bay Seasoning and 3 fresh garlic cloves, thinly sliced lengthwise. It was incredibly yummy, melts in your mouth and so easy!

Roasted Lemon Garlic Herb Shrimp: olive oil, lemon, garlic, thyme & fresh shrimp baked in glass baking pan in 400 degree oven for 10-12 minutes. I served this over Lemon Linguine w/ Garlicky Breadcrumbs (see 11/11/14 pin for pasta recipe). It was spectacular! I added stir-fried greens and shredded carrots on the side. Artichoke Cheese Bread (makes 1 loaf) Ingredients: 1 (14 ounce) can artichoke hearts (drained and chopped) 2 green onions (sliced) 2 cloves garlic (chopped) 1 (4 ounce) package cream cheese (room temperature) 1/4 cup mayonnaise 1/2 cup sour cream 1/2 cup mozzarella (grated) 1/4 cup parmigiano reggiano (grated) 1 loaf Italian bread (sliced in half lengthwise) Directions: 1. Mix the artichoke hearts, green onions, garlic, cream cheese, mayonnaise, sour cream, mozzarella and parmigiano reggiano reserving some of the cheese. 2. Hollow 1/2 an inch out of the center of both halves of the bread. 3. Spread the mixture into the hole in the bread slices and top with the reserved cheese. 4. Bake in a preheated 350F oven covered in foil for 20 minutes. 5. Remove the foil and continue to bake until the cheese is melted and golden brown.

Penne Rosa with Shrimp- the creamy marinara sauce is made with greek yogurt instead of heavy cream, and the pasta is whole wheat, so this is a healthy pasta dish.
Baked Kale Chips. These are SO good. I make mine with a tiny bit of salt, freshly cracked black pepper, red pepper flakes, chili powder, and a little garlic powder. and top with a little fresh grated parm towards the end. It's impossible to eat just one of these. I literally can eat a whole bunch of kale in two days.

Easy Garlic and Lemon Shrimp - When I saw cleaned, deveined shrimp on sale for 3.99 a lb, I knew it was Shrimp Night, and this was fabulous! Easy to convert to a South Beach Diet recipe, too. Takes about 10 minutes, start to finish. I served this with a spinach and pasta salad, and a scoop of lemon sorbet for dessert.

Bobby’s Lighter Tastes Like Lasagna Soup 404 less calories 28 g less fat Ingredients: 2 teaspoons olive oil 1 pound Italian turkey sausage, casings removed 1 onion, chopped 1 green bell pepper, chopped 3 cloves garlic, minced 1 (32-ounce) container chicken broth 1 (15-ounce) can tomato sauce 1 (14 1/2-ounce) can petite diced tomatoes 1/2 teaspoon salt 1/4 teaspoon crushed red pepper 4 ounces broken whole-wheat lasagna noodles (about 4 noodles) 1/2 cup chopped fresh basil 3 tablespoons grated parmesan cheese 1/2 cup reduced-fat shredded mozzarella cheese 8 Whole-wheat breadsticks or grissini (optional) Instructions: Heat the oil over medium-high heat in a large nonstick saucepot or Dutch oven. Dijon Maple Chicken Chicken thighs- 1 package Dijon mustard- 1/2 cup Maple syrup- 1/4 cup Rice/rice wine vinegar- 1 tablespoon Fresh rosemary Salt and pepper Salt and pepper the chicken. Mix remaining ingredients together and pour over chicken. Cook chicken at 450 F for 40 minutes, basting the chicken with the sauce half way through.
This chicken recipe is easy and yummy: In a small bowl, whisk together 1/2 C Dijon mustard, 1/4 C maple syrup, and 1 Tblsp rice wine vinegar. Line a baking dish with foil and arrange boneless, skinless chicken thighs in pan. Salt and pepper the chicken, then pour mustard-syrup mixture over the top, turning to coat each piece. Sprinkle with rosemary and bake uncovered at 450 F for 40 minutes, basting a couple of times during cooking. Very tasty! I have not tried this with chicken breasts...
