Chocolate Mousse Pudding 1 pound silken tofu, 1 12-ounce bag chopped semisweet chocolate or 1 bag good-quality semi-sweet chocolate chips 1/2 cup soymilk Directions Place chocolate in a glass bowl and microwave on high, stirring every 45 seconds, until melted, about 3 minutes total. Combine chocolate, tofu and soymilk in blender and puree until very smooth, scraping down sides of blender if necessary, about 1 minute. Distribute among six 4-oz. ramekins or small glass bowls and chill.
