If you've ever made French bread at home, you've made pizza dough. Traditional, DOC (Denominazione de Origine Controllata) designated pizza dough from Italy contains nothing but flour, salt, water, and yeast. The dough at most neighborhood pizza joints contains a few more ingredients. Fats are added to make the dough more supple, and sugars are added to feed the yeast and give the bread a touch of sweetness.
Converting a recipe that uses Instant yeast to a sourdough starter recipe
Can anyone tell me... Is there a simple approach to convert a recipe that uses commerical yeast to a sourdough starter , I have been very happy with the sourdough starter that i am using and now want to convert more recipes to this style of bread making, Looking forward to some ideas Brotboy
I have been baking with wild yeast sourdough for the past 5 years. It all began when I purchased a starter from Sourdoughs International. One starter led to another starter, until I had 5 different ones. Recently, I felt up to the challenge of making my own wild yeast starter from scratch. I had tried this once before, many years ago, with no success at all. At that time I knew next to nothing about wild yeast and how it works. This starter recipe is awesome because it really works, and it explains why it works. The starter I made is very good. The flavor is amazing and it rises very well. I purchased rye and wheat berries at my local health food store and ground them in a coffee grinder to make flour for my starter. It was kind of tedious to grind but I only needed a few tablespoons. I'm sure that you could just buy freshly milled flour at the health food store and it would work just as well. The wild yeast is on the grains and you just need to provide the right conditons to wake it up.

They have moved into a new location. 755 Southpoint Blvd, Petaluma, CA. 866-979-2253They have a very large selection of organic bulk flours. Now, you can call ahead, and they will pack 5lb bags. They ask that you please call ahead though, otherwise, you will wait for some time. If you are buying in 25 or 50lb bags, no problem.Under construction, is a Bakery School, on site, that will be open soon.Please email me your contact, if you are intersted in bulk flour. We were told that if enough of us order, they will deliver to SF, as they deliver to the Ferry Bldg twice a week.Earl
